Healthy-ish Chocolate Mousse

Because dessert is a necessity.

This mousse is rich, fluffy, and made with just a few real ingredients.
Perfect for impressing guests (or just treating your fabulous self).

Ingredients (serves 4)

  • 200g dark chocolate (75–85%, sweetened with coconut or organic cane sugar)

  • 3 organic eggs, separated

  • 200ml organic whipping cream

  • 20g coconut sugar (grind it if it's coarse, a mortar & pestle works great)

How to make it

  1. Melt the chocolate using a bain-marie (bowl over simmering water). Stir until smooth and glossy. Let it cool a bit.

  2. Whisk the egg yolks in a small bowl. Stir them into the slightly cooled (but still melted) chocolate.

  3. In another bowl, beat the egg whites with coconut sugar until stiff peaks form. (Fluffy cloud vibes.)

  4. Whip the cream until soft peaks form, light, not too stiff.

  5. Fold the whipped cream gently into the chocolate mix.

  6. Fold in the egg whites in 2–3 parts, keeping things light and airy. Don’t overmix.

  7. Spoon into ramekins or cute glasses. Chill in the fridge for at least 2 hours (overnight is the best).

  • Make ahead? These beauties keep in the fridge for up to 3 days.
